I have been craving spaghetti lately and searching like crazy to find a raw recipe that looks and tastes like the “cooked” version. This recipe is fun to make and tastes just like the good ole cooked version!! Hope you enjoy as much as I do.
(This dish is created by Darlene Navarre, and it is delicious!!!!)
1 ripe Roma tomato
1/2 cup sun-dried tomato slices
1 garlic clove
1 tablespoon Agave Nectar (1 date or 1 TB raisins works too)
1/4 cup chopped red bell pepper
1 teaspoon dried Italian seasonings
1 teaspoon fennel seed
2 tablespoons olive oil(optional)
Feel free to add:
a couple of tablespoons fresh basil
a bit of chopped hot chilies
sea salt to taste
Blend in a Vita Mix blender until smooth. I like to add 1/2 cup of chopped tomatoes for a chunky sauce.
Serve on top vegetable noodles. Shred vegetables with a cheese grater or spiral slicer. Vegetable such as zucchini, jicama, and any other root veggie work wonderfully.
Raw Pasta Noodles
1-2 Zucchini – Julienne or use a potato peeler to make long wide noodles
1-2 Yellow Squash – Julienne or use a potato peeler to make long wide noodles
Or use any root vegetable you may want to use for your noodles
Sea salt or Himalayan sea salt to taste
